Calienta una sart\u00e9n antiadherente de 12 pulgadas a fuego medio-alto. Agrega la salchicha y la cebolla picada a la sart\u00e9n. Cocina durante unos 5 minutos o hasta que la salchicha ya no est\u00e9 rosada y la cebolla est\u00e9 tierna pero firme, revolviendo para desmenuzar la carne. Transfiere a un taz\u00f3n.<\/li>\n\n\n\n<li><strong>Limpia<\/strong> la sart\u00e9n con una toalla de papel; coloca el aceite en la sart\u00e9n. Calienta a fuego medio-alto. Vierte el sustituto de huevo en la sart\u00e9n; espolvorea con sal y pimienta. Cocina 2 minutos o hasta que el fondo est\u00e9 firme, levantando el borde del huevo para permitir que la porci\u00f3n cruda fluya por debajo. Reduzce el fuego a medio-bajo. Tapa y cocina 4 minutos o hasta que la parte superior est\u00e9 firme.<\/li>\n\n\n\n<li><strong>Desliza<\/strong> suavemente el huevo cocido sobre un plato grande para servir; coloca la mezcla de salchicha en el centro. Espolvorea con \u00bc de taza de queso. Dobla los lados del omelet sobre la mezcla de salchicha. Espolvorea con el \u00bc de taza de queso restante y cebollines, si lo deseas.
